Soaked Carroty Oats
Add some nutrition power to your morning oats by adding some carrots. Carrots have numerous health benefits such as the high level of beta-carotene (converted to vitamin A in the liver) which act as an antioxidant to cell damage done to the body through regular metabolism.
The added carrots give a naturally sweet flavour to the oats which are kid friendly too!!
1 grated carrot
1 cup of oats
1/2 cup mixed seeds (sunflower seeds, sesame seeds, pumpkin seeds)
1- teaspoons of spices (whatever you like; cinnamon, ginger, cardamon, nutmeg)
1 orange, zest finely grated and juice set a side
1/2 cup water (you can also use coconut water, coconut or almond milk)
optional - honey, maple, monk fruit or stevia
In a bowl add the oats, grated carrot, mixed seeds, spices, zest of orange and mix.
Add juice of the orange and 1/2 cup of water and sweetener if using
Cover the bowl and place in fridge overnight
When ready to use, take out of fridge, add desired toppings such as; coconut yoghurt, berries, more plant based milk or stewed fruit.
