Collagen Plumps

One of the most frequently asked questions in terms of diet from my clients is ‘What should/could I have for breakfast?’ My answer is always protein and/or good quality fats so you dont’ have blood glucose sky rocketing at the start of the day which potentially can lead to blood sugar dys-regulation all day.

Collagen Plumps are a favourite of mine to recommend to clients for breakfast. High in protein, versatile and easy to make. You can really add any flavour you like. Another barrier for clients having a really good, healthy breakfast is time deficiency, these you can make days in advance and have them ready to go the morning.

Collagen Plumps are also great to have as a snack or desserts. I loved them so much for their health benefits we were on the way to manufacturing them to take them to market and sell, however we realised the enormity of the project and felt it was too much with Miss Indi on the way.

I will share the basic ingredients and recipe but really you can get as creative as you like.

Ingredients:

  • 1/2 cup Gelatin

  • 1/2 cup water

  • 1/3 cup natural sweetener of choice (i use xylitol or Lakanto

  • Different flavourings; 2 tablespoons of cacao or matcha tea or spralina

  • 250ml of coconut milk (or other milk, or you can use freshly squeezed orange or lemon)

Method

  1. Mix the gelatin and water in a bowl and stir quickly until its all mixed in. let it bloom for 5 minutes

  2. n a saucepan add the coconut milk (or other base).

  3. Add the sweetener and gelatin to the milk and over a light heat stir until its thoroughly mixed in.

  4. Add the flavour (cacao, matcha tea or other), mix.

  5. Pour into glass jars, ramekins or molds for kids.

  6. Put into the fridge and leave set for 30 minutes.

  7. You can then add coconut yoghurt, berries, nuts, seeds or coconut as a toping if you wish.
