Raw Veggie Wrap - Spinach, Zucchini, Coriander and Walnut

This is another of my favourite bread alternatives recipes.  Raw veggie wraps are a fantastic way to get extra nutrients, antioxidants and polyphenols in.  They can also be a great snack for kids and are free from wheat, gluten, dairy, preservatives, flour and sugar.  You can also swap out the walnuts to seeds if you need it to be nut free. 

Ingredients:

  • 2 zucchini's

  • 1 big handful of spinach

  • 1/2 onion

  • 2 cloves garlic

  • 1/2 cup coriander

  • 1/2 cup parsley

  • 1/2 cup walnuts

  • 1/4 cup ACV

  • 1/4 cup olive oil

  • 1/4 cup flaxseed meal

Method:

  • Blend everything together in a food processor until it becomes a thick paste.  Use some water if needed.  

  • Spread evenly onto baking paper, then dehydrator tray.

  • Dehydrate for 12 hours on 45 degrees C

Enjoy using it as a wrap, or break into crackers or croutons to put over salads.
