Raw Veggie Dip
Or scraps dip because you can really use any vegetable you have in the fridge. Dips are a great way to amp your antioxidant and fibre intake up with the addition of nuts and/or seeds for increased fatty acids and minerals.
1 cup coriander
1/2 cup sunflower seeds
1/4 cup pumpkin seeds
1/2 cup olive oil
3 cups of mixed veggies (in this picture I used celery, fennel, bok choy, tomatoe and carrot)
2 garlic cloves
3 table spoons ACV
1/4 lemon or grapefruit juice
Blend everything together in a food processor until desired consistency.
